Salmon With Parmesan, Garlic And Herb Crust- Use Chicken Or Lamb

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 garlic clove, peeled
  • 1/4 cup flat leaf parsley
  • 2 slices whole wheat bread (i use low carb)
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • fresh ground black pepper
  • 1 1/2 lbs salmon fillets, skinless
  • 4 teaspoons dijon mustard

Recipe

  • 1 heat oven to 400. lightly coat your baking dish with non-stick spray (i always use olive oil in a misto- love those things).
  • 2 in a food processor, mince the garlic clove then add the parsley and pulse until combined, about 15 seconds. add the bread, cheese, oil, salt and a few grinds of black pepper. pulse until well combined.
  • 3 arrange the fish or meat in the baking dish. spread with mustard then pat the crumbs on top of each one.
  • 4 bake until browned and cooked through-
  • 5 20 min or so for salmon.
  • 6 15 min or so for flounder.
  • 7 25 min or so for chicken.
  • 8 30 min or so for lamb.
  • 9 cooking times will depend on the thickness of your fillets.
