Salmon With Parmesan, Garlic And Herb Crust- Use Chicken Or Lamb

Ingredients
- Servings: 4
- 1 garlic clove, peeled
- 1/4 cup flat leaf parsley
- 2 slices whole wheat bread (i use low carb)
- 1/4 cup parmesan cheese, grated
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- fresh ground black pepper
- 1 1/2 lbs salmon fillets, skinless
- 4 teaspoons dijon mustard
Recipe
- 1 heat oven to 400. lightly coat your baking dish with non-stick spray (i always use olive oil in a misto- love those things).
- 2 in a food processor, mince the garlic clove then add the parsley and pulse until combined, about 15 seconds. add the bread, cheese, oil, salt and a few grinds of black pepper. pulse until well combined.
- 3 arrange the fish or meat in the baking dish. spread with mustard then pat the crumbs on top of each one.
- 4 bake until browned and cooked through-
- 5 20 min or so for salmon.
- 6 15 min or so for flounder.
- 7 25 min or so for chicken.
- 8 30 min or so for lamb.
- 9 cooking times will depend on the thickness of your fillets.
