Salmon With Pesto Crust

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup fresh breadcrumb
  • 1 lemon, juice and rind of
  • 3 tablespoons olive oil
  • 4 tablespoons pesto sauce
  • 4 salmon fillets
  • 2 ounces butter
  • 1 lemon, juice and rind of
  • 1 cup creme fraiche

Recipe

  • 1 mix the breadcrumbs, lemon rind, oil and pesto. add the lemon juice. remove the skin from the salmon, press on the crumbs and put on a greased baking tray and bake in a 400* oven for 15 mins or until salmon is cooked through.
  • 2 sauce --
  • 3 melt butter and whisk in the lemon juice, rind and creme fraiche.pour the sauce on to plates and top with fish .
