Salmon With Pesto Crust

Ingredients

- 1 cup fresh breadcrumb
- 1 lemon, juice and rind of
- 3 tablespoons olive oil
- 4 tablespoons pesto sauce
- 4 salmon fillets
- 2 ounces butter
- 1 lemon, juice and rind of
- 1 cup creme fraiche
Recipe
- 1 mix the breadcrumbs, lemon rind, oil and pesto. add the lemon juice. remove the skin from the salmon, press on the crumbs and put on a greased baking tray and bake in a 400* oven for 15 mins or until salmon is cooked through.
- 2 sauce --
- 3 melt butter and whisk in the lemon juice, rind and creme fraiche.pour the sauce on to plates and top with fish .
