Salmon With Pesto Mayo

Ingredients

  • Servings: 4
  • 4 (6 ounce) salmon fillets, skinless and boneless
  • 4 tablespoons breadcrumbs
  • 1/4 cup mayonnaise
  • 3 tablespoons pesto sauce
  • 1 tablespoon parmesan cheese, grated

Recipe

  • 1 preheat broiler.
  • 2 place the salmon on the greased rack of a broiler pan, tucking any thin edges under.
  • 3 broil 4 inches from the heat for 4-6 min per 1/2-inch thickness or until fish just begins to flake easily with a fork.
  • 4 turn any pieces over 1 inch thick halfway through broiling.
  • 5 meanwhile, in a small bowl stir together the mayonnaise and pesto; set aside.
  • 6 combine bread crumbs and parmesan cheese in a small bowl.
  • 7 spoon the mayonnaise mixture over the salmon.
  • 8 sprinkle with crumb mixture.
  • 9 broil for 1-2 min more or until the crumbs are lightly browned.
