Salmon With Pesto Mayo

Ingredients

- 4 (6 ounce) salmon fillets, skinless and boneless
- 4 tablespoons breadcrumbs
- 1/4 cup mayonnaise
- 3 tablespoons pesto sauce
- 1 tablespoon parmesan cheese, grated
Recipe
- 1 preheat broiler.
- 2 place the salmon on the greased rack of a broiler pan, tucking any thin edges under.
- 3 broil 4 inches from the heat for 4-6 min per 1/2-inch thickness or until fish just begins to flake easily with a fork.
- 4 turn any pieces over 1 inch thick halfway through broiling.
- 5 meanwhile, in a small bowl stir together the mayonnaise and pesto; set aside.
- 6 combine bread crumbs and parmesan cheese in a small bowl.
- 7 spoon the mayonnaise mixture over the salmon.
- 8 sprinkle with crumb mixture.
- 9 broil for 1-2 min more or until the crumbs are lightly browned.
