Spicy Cod With Tomatoes And Spinach

Ingredients

  • Servings: 6
  • 1 lb cod
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 (14 1/2 ounce) can chopped tomatoes
  • 2 (10 ounce) cans chopped tomatoes and green chilies
  • 1/2 onion, chopped
  • 2 shallots, chopped
  • 3 cloves garlic, chopped
  • 3 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 -2 teaspoon olive oil

Recipe

  • 1 heat the olive oil in a large pan over medium high heat.
  • 2 add the onions, shallots, and garlic.
  • 3 cook until the onion is translucent.
  • 4 add all the tomatoes, the tomato paste, and the cumin.
  • 5 stir and let it simmer 3-5 minutes or until it starts to thicken slightly.
  • 6 add the spinach and stir until it is combined.
  • 7 let it cook 2-3 minutes.
  • 8 meanwhile chop the cod into small even pieces.
  • 9 add it to the tomato sauce, stirring to make sure it is all covered with sauce.
  • 10 let it simmer 5-8 minutes or until the fish is opaque and flakes easily with a fork.
