Spicy Cod With Tomatoes And Spinach

Ingredients

- 1 lb cod
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (14 1/2 ounce) can chopped tomatoes
- 2 (10 ounce) cans chopped tomatoes and green chilies
- 1/2 onion, chopped
- 2 shallots, chopped
- 3 cloves garlic, chopped
- 3 tablespoons tomato paste
- 1 teaspoon cumin
- 1 -2 teaspoon olive oil
Recipe
- 1 heat the olive oil in a large pan over medium high heat.
- 2 add the onions, shallots, and garlic.
- 3 cook until the onion is translucent.
- 4 add all the tomatoes, the tomato paste, and the cumin.
- 5 stir and let it simmer 3-5 minutes or until it starts to thicken slightly.
- 6 add the spinach and stir until it is combined.
- 7 let it cook 2-3 minutes.
- 8 meanwhile chop the cod into small even pieces.
- 9 add it to the tomato sauce, stirring to make sure it is all covered with sauce.
- 10 let it simmer 5-8 minutes or until the fish is opaque and flakes easily with a fork.
