Spinach & Fish Bake

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 tablespoon margarine, melted
  • 1/4 cup breadcrumbs
  • 10 ounces frozen spinach, thawed & squeezed dry
  • 24 ounces fish fillets (any fish such as halibut, tilapia, flounder, etc..)
  • salt & pepper

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 mix margarine & breadcrumbs together & set aside.
  • 3 spread spinach on the bottom of a shallow glass baking dish.
  • 4 arrange fish fillets over spinach, season with salt & pepper and sprinkle with breadcrumb mixture.
  • 5 bake until fish is opaque throughout-approx. 8-10 minutes.
  • 6 serve as is, or on top of a bed of mashed potatoes!
