Stir Fried Scallops And Vegetables

Ingredients

- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 lb scallops
- 4 slices bacon, chopped
- 1/2 lb fresh mushrooms, sliced
- 1 red bell pepper, cut in strips
- 6 ounces snow peas
- 2 tablespoons water
- black pepper
Recipe
- 1 in a medium bowl, mix together soy sauce and cornstarch until well blended. add scallops and toss to coat.
- 2 in a wok or large skillet, cook bacon over medium heat, stirring until crisp and brown. 5-7 minutes.
- 3 remove bacon and set aside. drain all except 1 tablespoon fat from wok.
- 4 add scallops and stir-fry until just opaque, about 3 minutes. remove from pan.
- 5 add mushrooms, red bell pepper and snow peas to the wok. stir fry 2-3 minutes, or until crisp-tender.
- 6 return bacon and scallops to wok. add water and stir-fry until hot. season with black pepper.
