Stir Fried Scallops And Vegetables

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 lb scallops
  • 4 slices bacon, chopped
  • 1/2 lb fresh mushrooms, sliced
  • 1 red bell pepper, cut in strips
  • 6 ounces snow peas
  • 2 tablespoons water
  • black pepper

Recipe

  • 1 in a medium bowl, mix together soy sauce and cornstarch until well blended. add scallops and toss to coat.
  • 2 in a wok or large skillet, cook bacon over medium heat, stirring until crisp and brown. 5-7 minutes.
  • 3 remove bacon and set aside. drain all except 1 tablespoon fat from wok.
  • 4 add scallops and stir-fry until just opaque, about 3 minutes. remove from pan.
  • 5 add mushrooms, red bell pepper and snow peas to the wok. stir fry 2-3 minutes, or until crisp-tender.
  • 6 return bacon and scallops to wok. add water and stir-fry until hot. season with black pepper.
