Heart Smart Salmon Croquettes

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 lb salmon
  • 1 small onion
  • 1/2 teaspoon ready to use chopped garlic
  • 1/4 teaspoon pepper
  • 1 cup breadcrumbs
  • 1 (4 ounce) container egg beaters egg substitute
  • pam cooking spray
  • skim milk (optional)
  • light olive oil (optional)

Recipe

  • 1 place drained salmon in a medium sized mixing bowl.
  • 2 if using canned, remove bones and skin and mash with a fork.
  • 3 if using leftover fresh salmon, flake with fork.
  • 4 chop the onion very fine and add to salmon.
  • 5 add chopped garlic.
  • 6 add pepper.
  • 7 add egg beaters.
  • 8 stir in bread crumbs.
  • 9 stir or knead the mixture until well mixed.
  • 10 if using leftover baked or grilled salmon, and the mixture is too dry, add a small amount of skim milk.
  • 11 form the mixture into patties, cones or ovals.
  • 12 spray cooking pan with pam.
  • 13 place croquettes in warm pan and cook until lightly browned.
