  • 4 (6 ounce) salmon fillets, skin removed
  • 1/2 teaspoon kosher salt
  • 1 tablespoon olive oil

  • 1 small shallot, finely chopped
  • 1/2 cup wine
  • 1 tablespoon dijon mustard

  • 7 reduce heat to low and whisk in the mustard, dill, pepper and the remaining salt.
  • 8 remove from heat.
  • 9 cut remaining butter into pieces, add to the sauce, and whisk until incorporated.
  • 10 place salmon on individual plates, spoon the sauce over the top, and sprinkle with additional dill.
  • 11 serve with the cucumber, if desired.
