Seafood Casserole

Ingredients
- 2 large eggs
- 3 cups mashed potatoes
- 1/2 cup cheddar cheese, shredded
- 1/2 teaspoon ground pepper (to taste)
- 1 teaspoon paprika
- 2 tablespoons butter
- 1 cup fresh mushroom, sliced
- 1/4 cup flour
- 2 cups milk
- 2 tablespoons dry wine
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon parsley flakes
- 1/2 teaspoon season salt
- 1/2 teaspoon ground pepper (to taste)
- 1 1/2 cups imitation crab meat, cut into bite size pieces
- 1 lb shrimp, cooked peeled and deveined
- 1 cup peas
- 1 cup cheddar cheese, shredded
Recipe
- 1 combine eggs, mashed potatoes, 1/2 cup cheddar, and pepper in a medium bowl. mix well, press into the bottom of a 2 quart shallow baking dish.
- 2 sprinkle paprika over the dish. set aside.
- 3 melt butter in a large sauce pan. add mushrooms and cook until softened.
- 4 sprinkle with flour. heat and stir about 1 minute.
- 5 slowly add the milk. stirring constantly until smooth. add wine. heat and stir about 10 minutes until it thickens.
- 6 to the saucepan add 1 cup cheddar, parsley, season salt and pepper. stir until the cheese is melted and remove from heat.
- 7 to the saucepan add crab meat, shrimp, and peas.
- 8 bake at for 20 minutes until heated through.
- 9 sprinkle with remaining cheese and bake for another 10 minutes.
