Seafood Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 large eggs
  • 3 cups mashed potatoes
  • 1/2 cup cheddar cheese, shredded
  • 1/2 teaspoon ground pepper (to taste)
  • 1 teaspoon paprika
  • 2 tablespoons butter
  • 1 cup fresh mushroom, sliced
  • 1/4 cup flour
  • 2 cups milk
  • 2 tablespoons dry wine
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon season salt
  • 1/2 teaspoon ground pepper (to taste)
  • 1 1/2 cups imitation crab meat, cut into bite size pieces
  • 1 lb shrimp, cooked peeled and deveined
  • 1 cup peas
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 combine eggs, mashed potatoes, 1/2 cup cheddar, and pepper in a medium bowl. mix well, press into the bottom of a 2 quart shallow baking dish.
  • 2 sprinkle paprika over the dish. set aside.
  • 3 melt butter in a large sauce pan. add mushrooms and cook until softened.
  • 4 sprinkle with flour. heat and stir about 1 minute.
  • 5 slowly add the milk. stirring constantly until smooth. add wine. heat and stir about 10 minutes until it thickens.
  • 6 to the saucepan add 1 cup cheddar, parsley, season salt and pepper. stir until the cheese is melted and remove from heat.
  • 7 to the saucepan add crab meat, shrimp, and peas.
  • 8 bake at for 20 minutes until heated through.
  • 9 sprinkle with remaining cheese and bake for another 10 minutes.
