South-of-the-border Fish And Sweet Potato Chips On The Grill

Ingredients
- 16 ounces whiting fish fillets
- 1 lb sweet potato
- 1/2 cup bell pepper, sliced
- 1 tablespoon extra virgin olive oil (or other cooking oil, but i suggest olive oil)
- garlic salt
- onion powder
- salt
- black pepper
Recipe
- 1 fish:.
- 2 spray grill rack with cooking spray, heat to 380°f.
- 3 season fish fillets with 1 tsp onion powder, thyme, salt and pepper.
- 4 cook fillets on grill, 4 mins per side; fish will flake easily with a fork when done.
- 5 sweet potatoes and bell peppers:.
- 6 cut sweet potatoes however you like to serve them (i suggest wedges), mix with bell peppers, toss 1 tbsp oil to coat, season with garlic salt, onion powder, salt and pepper.
- 7 pour seasoned sweet potatoes and bell peppers into a foil pan or foil, place on grill and cook for 30 mins, or until tender. make sure to stir while cooking.
- 8 serve fish with chips, enjoy!
