South-of-the-border Fish And Sweet Potato Chips On The Grill

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 16 ounces whiting fish fillets
  • 1 lb sweet potato
  • 1/2 cup bell pepper, sliced
  • 1 tablespoon extra virgin olive oil (or other cooking oil, but i suggest olive oil)
  • garlic salt
  • onion powder
  • salt
  • black pepper

Recipe

  • 1 fish:.
  • 2 spray grill rack with cooking spray, heat to 380°f.
  • 3 season fish fillets with 1 tsp onion powder, thyme, salt and pepper.
  • 4 cook fillets on grill, 4 mins per side; fish will flake easily with a fork when done.
  • 5 sweet potatoes and bell peppers:.
  • 6 cut sweet potatoes however you like to serve them (i suggest wedges), mix with bell peppers, toss 1 tbsp oil to coat, season with garlic salt, onion powder, salt and pepper.
  • 7 pour seasoned sweet potatoes and bell peppers into a foil pan or foil, place on grill and cook for 30 mins, or until tender. make sure to stir while cooking.
  • 8 serve fish with chips, enjoy!
