Stir Fried Scallops And Apples

Ingredients

- 2 stalks celery
- 1 lb scallops
- 2 apples
- 3 tablespoons margarine
- 1 lemon
Recipe
- 1 coarsley chop celery, and slice scallops.
- 2 peel and quarter apples.
- 3 heat margarine in heavy skillet over high heat and stir fry celery for 2 minutes.
- 4 add scallops, sprinkling with juice from half the lemon.
- 5 coarsley cut apple pieces into mixture, stirring constantly, for another 2-3 minutes, adding more margarine if needed.
- 6 sprinkle with juice from remaining half of lemon, and serve.
