Stir Fried Scallops And Apples

Ingredients

  • Servings: 4
  • 2 stalks celery
  • 1 lb scallops
  • 2 apples
  • 3 tablespoons margarine
  • 1 lemon

Recipe

  • 1 coarsley chop celery, and slice scallops.
  • 2 peel and quarter apples.
  • 3 heat margarine in heavy skillet over high heat and stir fry celery for 2 minutes.
  • 4 add scallops, sprinkling with juice from half the lemon.
  • 5 coarsley cut apple pieces into mixture, stirring constantly, for another 2-3 minutes, adding more margarine if needed.
  • 6 sprinkle with juice from remaining half of lemon, and serve.
