Sea Bean Chowder

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 3 cups dried beans or 3 cups canned beans
  • 2 cups onions, chopped
  • 6 garlic cloves, minced
  • 1 (32 ounce) container clamato juice
  • 1 cup wine or 1 cup sherry wine
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 2 tablespoons parsley, chopped or 2 teaspoons dried parsley
  • 1/4 cup fennel, chopped or 1/2 teaspoon crushed fennel seed
  • salt & pepper
  • 1 (16 ounce) jar salsa, chunky style
  • 1 (10 ounce) jar baby clams, whole
  • 1 lb shrimp, briefly cooked and shelled

Recipe

  • 1 cook dried beans.
  • 2 saute onion in oil.
  • 3 add clamato juice, wine and all seasonings.
  • 4 simmer simmer for a long time.
  • 5 add beans.
  • 6 15 minutes before serving add shrim and undrained clams.
