Seafood - Spinach - Orzo

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 12 large shrimp, raw, peeled with tail on or 8 large fresh scallops
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 lemon, juiced
  • 3 tablespoons butter
  • 1 teaspoon green onions or 1 teaspoon parsley, chopped
  • 1 (16 ounce) package fresh spinach, washed and stems removed
  • 1 cup orzo pasta, cooked according to directions
  • 1/2 lemon, wedged

Recipe

  • 1 saute the fresh spinach in a non-stick medium skillet in 1 t. butter and a little salt and pepper - dont' over cook, it cooks very quickly and i only cook it for a minute or so. then put the spinach on top of the precooked, warm orzo (follow the box instructions)- place it on an attractive serving plate. then --
  • 2 saute shrimp (or scallops) in 2 t. butter and the garlic and lemon juice. cook for 5-6 minutes, don't overcook. top the spinach/orzo with the seafood - sprinkle with the green onion if desired - serve with lemon wedges. best served immediately.
