Steamed Salmon Parcels

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 salmon steaks
  • 2 tablespoons tikka masala paste
  • 2 tablespoons low-fat yogurt
  • 2 scallions, sliced
  • 1 tablespoon fresh dill, roughly chopped
  • 1/2 lime, juice of
  • 2 tablespoons raita
  • salt and pepper

Recipe

  • 1 in a bowl, mix together the tikka masala paste and yoghurt.
  • 2 add the salmon fillets and coat well with the marinade.
  • 3 lay the scallions in the centre of a piece of foil and place each salmon fillet on top. sprinkle with dill.
  • 4 carefully wrap and seal the parcels before placing on the barbecue or in a preheated oven at 350f for 15-20 minutes
  • 5 in a bowl, mix the raita and lime juice together. add salt and black pepper to taste.
  • 6 remove the steamed parcels from the oven or barbecue and serve with a crunchy carrot salad and raita.
