Seafood And Portabella Mushrooms

Ingredients

- 1 lb shrimp
- 1 lb scallops
- 1/2 teaspoon seafood seasoning
- 1/2 teaspoon emeril's spice essence
- 1 shallot, chopped
- 7 tablespoons butter
- 4 large portabella mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 3 tablespoons parmesan cheese
- 2 tablespoons chives, chopped
Recipe
- 1 sauté seafood and shallots in 3 tablespoons butter and seafood seasoning.
- 2 cook 5 minutes.
- 3 sprinkle with 1/4 cup chicken broth,salt and pepper.
- 4 set aside.
- 5 sauté mushrooms in 1 tablespoon of butter.
- 6 add to seafood.
- 7 in another pan melt the remaining butter and add flour to make paste.
- 8 add milk, chicken broth, emeril's essence and tomato paste stir until smooth.
- 9 combine sauce and seafood mixture and place in a casserole or individual ramekins.
- 10 bake at 400f degrees for 30 minutes.
