Seafood And Portabella Mushrooms

Total Time: 2 hrs 15 mins Preparation Time: 45 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 lb shrimp
  • 1 lb scallops
  • 1/2 teaspoon seafood seasoning
  • 1/2 teaspoon emeril's spice essence
  • 1 shallot, chopped
  • 7 tablespoons butter
  • 4 large portabella mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 3 tablespoons parmesan cheese
  • 2 tablespoons chives, chopped

Recipe

  • 1 sauté seafood and shallots in 3 tablespoons butter and seafood seasoning.
  • 2 cook 5 minutes.
  • 3 sprinkle with 1/4 cup chicken broth,salt and pepper.
  • 4 set aside.
  • 5 sauté mushrooms in 1 tablespoon of butter.
  • 6 add to seafood.
  • 7 in another pan melt the remaining butter and add flour to make paste.
  • 8 add milk, chicken broth, emeril's essence and tomato paste stir until smooth.
  • 9 combine sauce and seafood mixture and place in a casserole or individual ramekins.
  • 10 bake at 400f degrees for 30 minutes.
