Scottish Smoked Salmon Paté

Ingredients

- 3 ounces butter
- 7 ounces smoked salmon, cut into 1/2 inch pieces
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest, grated
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons worcestershire sauce
- salt and pepper
- 1/2 cup heavy cream
Recipe
- 1 place salmon, butter, lemon juice, lemon zest, worcestershire and red pepper flakes if used in a bowl.
- 2 blend until you will get a smooth paste.
- 3 add salt and pepper to taste, blend shortly.
- 4 in another bowl beat the cream to stiff peaks.
- 5 fold cream into the salmon paste and spoon in a nice bowl.
- 6 top with some red pepper flakes if desired.
- 7 chill for at least 2 hours until serving.
