Spicy Tomato Prawns

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 tablespoons vegetable oil
  • 1 brown onion, sliced
  • 4 garlic cloves
  • 2 small red chilies, crushed
  • 1 tablespoon grated ginger
  • 3 cups tomato puree
  • 1 cup fish stock
  • 1/4 cup malt vinegar
  • 1/4 cup caster sugar
  • sea salt and black pepper
  • 1 kg prawns
  • coriander leaves, extra chopped chilli and steamed rice to serve

Recipe

  • 1 heat oil in large pan.
  • 2 add the onion, garlic, chilli and ginger.
  • 3 cook for 2-3 minutes.
  • 4 add tomato puree, stock, vinegar, sugar, salt and pepper and cook for 8-10 minutes.
  • 5 add prawns and cook for 3-4 minutes until cooked through.
