Spicy Tomato Prawns

Ingredients
- Servings: 6
- 2 tablespoons vegetable oil
- 1 brown onion, sliced
- 4 garlic cloves
- 2 small red chilies, crushed
- 1 tablespoon grated ginger
- 3 cups tomato puree
- 1 cup fish stock
- 1/4 cup malt vinegar
- 1/4 cup caster sugar
- sea salt and black pepper
- 1 kg prawns
- coriander leaves, extra chopped chilli and steamed rice to serve
Recipe
- 1 heat oil in large pan.
- 2 add the onion, garlic, chilli and ginger.
- 3 cook for 2-3 minutes.
- 4 add tomato puree, stock, vinegar, sugar, salt and pepper and cook for 8-10 minutes.
- 5 add prawns and cook for 3-4 minutes until cooked through.
