Potato-chip Encrusted Salmon

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 -3 lbs salmon
  • salt
  • fresh ground black pepper
  • 1 (5 1/2 ounce) bag kettle-cooked potato chips
  • 1/2 lime, zest of
  • 1/3 cup chopped fresh dill
  • 2 tablespoons olive oil

Recipe

  • 1 preheat oven to 400°f.
  • 2 line a baking sheet with foil and lay the salmon, skin side down, in the center of the baking sheet.
  • 3 season with salt and pepper.
  • 4 crush kettle chips (they're crunchiest), lime zest and dill in a bowl until the chips resemble coarse crumbs. mix in olive oil.
  • 5 coat the salmon with a thin, even layer of potato chip mixture and pat gently so it stays put.
  • 6 bake for 20-25 minutes or until chip coating is nicely browned. use spatulas to transfer to plates to serve.
