Stir Fried Chicken With Lemon Grass, Ginger, And Chili

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons oil
  • 2 brown onions, roughly chopped
  • 4 garlic cloves, finely chopped
  • fresh ginger, finely grated
  • 3 stems lemongrass, part only, finely sliced
  • 2 teaspoons green chili peppers, chopped
  • 1 lb chicken thigh fillet, thinly sliced
  • 2 teaspoons sugar
  • 1 tablespoon fish sauce
  • mint (to garnish)

Recipe

  • 1 heat oil in a heavy based frying pan or wok.
  • 2 add the onion, garlic, ginger, lemon grass and chili and stir for 3 to 5 minutes over medium heat until the mixture is lightly golden.
  • 3 take care not to burn the mixture or it will become bitter.
  • 4 increase heat to high; when the pan is very hot, add the chicken and toss well.
  • 5 sprinkle the sugar over the chicken and cook for about 5 minutes, tossing regularly until the chicken is just cooked.
  • 6 add the fish sauce, cook for another 2 minutes and serve immediately, garnished with the mint.
