Dee Berger's Grandmother's Salmon Loaf

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb salmon
  • 1 medium onion, finely chopped
  • 1/2 lemon, juice of
  • 2 eggs, beaten lightly
  • 1 tablespoon matzo meal
  • 2 tablespoons parsley, minced
  • salt and pepper
  • 1/2 cup sour cream

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a medium sized bowl, debone salmon and remove skin.
  • 3 drain liquid.
  • 4 add all other ingredients, except sour cream and mix well.
  • 5 fold in sour cream last.
  • 6 spray a loaf pan with cooking spray.
  • 7 spread salmon mixture in pan.
  • 8 smooth out top.
  • 9 bake for 30-45 minutes or until top is slightly brown and knife inserted in center comes out clean.
  • 10 let sit for 5 minutes before slicing.
